WHY YOU NEED TO TRY PIÑA COLADA COFFEE
We added a not-so-secret ingredient to this recipe - our Piña Colada Coffee! Made of 100% Arabica coffee beans that come from Brazil and Central America, which are then roasted to perfection and then flavoured with notes of pineapple and coconut. It is a perfect brew for your morning routine and a great addition to any dessert recipe!
What’s great about this recipe is you can replace ingredients with alternatives to make it healthier. Swap out the butter for a vegan option, and it becomes dairy-free. Use almond or coconut flour instead of all-purpose flour to make it gluten-free.
Replace your regular white sugar with monk fruit sweetener to keep the sweetness without the added calories and carbohydrates of refined sugar. Just a note, though - monk fruit sugar tends to be sweeter than white sugar. If this is your first experience baking with monk sugar, you may want to use half as much (a ratio of 1: ½) to ensure your cookies don’t come out too sweet. HOW TO MAKE PINEAPPLE COCONUT COOKIES AT HOME
INGREDIENTS
- 2 cups all-purpose flour
- ½ cup butter, softened
- 2 tablespoons of brewed Piña Colada Coffee
- ¾ cup sugar
- ½ cup shredded coconut
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 tablespoons chopped pineapple
- 1 cup coconut milk

INSTRUCTIONS
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Using an electric mixer, blend the butter, egg, vanilla extract, Piña Colada Coffee, and coconut milk until smooth.
- While using the mixer on low, slowly add the flour, sugar, shredded coconut, and baking soda.
- Keep mixing until you achieve the consistency of dough.
- You can use an ice cream scooper to create small balls of dough to place, spaced out, on the baking tray.
- Garnish each ball of cookie dough with coconut and chopped pineapple
- Bake for 8-10 minutes until they are cooked at the centre. Enjoy!
