Ingredients
- 10 vanilla wafers
 - 1/2 cup icing sugar (or adjust to taste)
 - 1/4 cup cocoa powder
 - 1/4 cup coconut flakes (for the truffle mixture)
 - 1/2 cup chopped walnuts
 - 1/4 cup brewed Coconut Snowflake coffee, cooled (use a concentrated brew for more flavor)
 - 2 tbsp light corn syrup
 - 2 tbsp rum
 - Coconut flakes, for rolling
 
Instructions
- Brew 4 oz Coconut Snowflake coffee; cool.
 - Crush vanilla wafers into fine crumbs.
 - Mix wafers with icing sugar, cocoa powder, walnuts, and coconut flakes.
 - Add coffee, corn syrup, and rum; stir into a sticky dough.
 - Roll into 1-inch balls.
 - Coat in coconut flakes.
 - Chill for 1 hour.
