Coffee and Rum Layaway Cocktail Recipe - Zavida Coffee

The second instalment in our Funky Coff-tail series is a Coffee and Rum Layaway Cocktail. It incorporates our Piña Colada Coffee that has a subtle pineapple-coconut flavour that compliments the spicy warmth of the rum and ginger beer wonderfully. 

A twist on the dark and stormy cocktail, this rum and coffee layaway-inspired cocktail is rimmed with coconut sugar and topped off with ginger beer.

A VARIATION OF THE WELL-KNOWN DRINK, THE DARK AND STORMY

What exactly is a layaway cocktail? Think of it as a reinvented dark and stormy, but with coffee. Just as a dark and stormy is a drink served cold, so is the layaway, but it borrows the spicy elements of spiced rum, ginger beer, and the kick of lime, and incorporates the richness and sweet notes of Piña Colada Coffee and coconut sugar.

AN EASY COFFEE AND RUM COCKTAIL TO MAKE

The end result is smoky yet tangy, spicy yet refreshing, with a sweet hint of summer. Easy yet innovative, this recipe is the perfect tool to impress your friends at your next dinner party. It tastes just like those bittersweet, precious last few weeks of vacation.

COFFEE AND RUM LAYAWAY COCKTAIL

INGREDIENTS

-2 oz spiced rum
2 oz Zavida’s Piña Colada Coffee, strong and room temp.
1-2 oz lime juice
4 oz ginger beer
1 TSP coconut sugar

INSTRUCTIONS

  • Brew your coffee and let it cool to room temperature.
  • Add rum, coffee, lime juice and coconut sugar to a cocktail shaker over ice. Shake for 10 seconds.
  • Rim a martini glass with coconut sugar and lime juice. 
  • Pour drink into a martini glass over ice. Top with ginger beer.
  • Garnish with pineapple and mint

NOTES 

If you don’t have an espresso machine, you can use a moka pot to brew your 2 oz shot of coffee.

If you don’t have coconut sugar, any sweetener you like will work! (Cane sugar, maple syrup, etc.)

You can use ginger ale and normal rum if you like, but we find that spiced rum and ginger beer adds a little extra spice that we LOVE!

After mixing spiced rum, Zavida's Piña Colada Coffee, lime juice and ginger beer, pour into a martini glass.
